Recipe name: welsh rarebit
Yield: 4 servings
Ingredients: Unsalted butter 3 tb Flour 3 tb Ale 2/3 c Extrasharp Cheddar cheese, 10 oz Grated English mustard 1 ts Worcestershire sauce 1 ts To 3 drops Tabasco pepper 2 Sauce English muffin halves, 12 Toasted Bacon, cooked to crispy 6 sl Chopped parsley, for Garnish

Preparation: Melt the butter in a saucepan over low heat, add the flour and whisk to make a roux. Cook for 2 to 3 minutes. Whisk in the ale and boil the mixture for 3 minutes while whisking. Reduce heat to low, add the Cheddar cheese, mustard, Worcestershire, and Tabasco pepper sauce, and cook, stirring, until hot but not boiling.
